We had the spritz running on day one at Hall of Flowers.
When I left Toronto, it was snowing.
By the time we landed in California, it was a full on heat wave.
So we figured we might as well bring a bit of that cold with us.
What started as a simple idea turned into one of the biggest hits at the booth. People kept coming back, bringing friends, asking what was in it.

Here is exactly what we ran.
The Concept
Keep it simple
- Light, not sugary
- Ice cold
- Slightly fizzy
- Clean ingredients
The BubbleTek acts as a cold reservoir and visual centerpiece. We finish each drink with soda water in the cup.
Before You Start
- Wash all fruit and herbs thoroughly
- Slice everything clean and consistent
- Use high quality organic produce
Clean inputs equal clean output
Recipe 1: Cucumber Lime Mint Spritz
This was the one people kept coming back for.
Ingredients for a 15 gallon batch
- Lemonade about 4.5 gallons (we used Trader Joes)
- Water about 6 gallons (since the ice contributed a bulk of the water content)
- Limeade about 0.5 to 1 gallon to taste
- Fresh cucumbers 5 to 8 thin sliced
- Fresh limes 10 to 15 for juice and wheels
- Fresh mint 1 to 2 packs
- Ice (we used 60-100 lbs per day)
Build
- Add lemonade and water to the BubbleTek at about a 1 to 2.5 ratio
- Add a splash of limeade
- Add:
- Thin cucumber slices
- A small handful of mint
- Fresh lime juice
- Add a few lime wheels
- Load with ice and circulate
Serve
- Pour from the BubbleTek
- Top with soda water
- Garnish with cucumber or mint
Why it worked
- Clean and not too sweet
- Cooling effect from cucumber and mint
- Smells fresh before you even take a sip
Recipe 2: Strawberry Citrus Spritz
This one pulled people in with color.
Ingredients for a 15 gallon batch
- Lemonade about 4.5 gallons
- Water about 6 gallons
- Strawberry lemonade about 1 to 2 gallons
- Frozen strawberries 2 to 3 bags
- Fresh lemons optional
- Ice
Build
- Mix lemonade and water at the same 1 to 2.5 ratio
- Add strawberry lemonade to taste
- Add frozen strawberries
- Add ice and circulate
Serve
- Pour base
- Top with soda water
- Add a strawberry for garnish
Why it worked
- Bright color caught attention
- Slightly sweeter option
- Still light enough to keep drinking
What We Learned
- Dilution matters more than anything
Too sweet and people do not come back - Carbonation goes in the cup not the tank
Keeps things consistent and avoids foam - Cold wins
Ice cold beats everything - Simple works
Two options was perfect
Final Thoughts
This was not meant to be a whole thing.
It was just a way to bring something cold into a heat wave and get people to hang out for a minute.
But it ended up doing a lot more than that.
We will definitely be running it again.
